Copper with a gold hue. Opening sniffs offer sweet leather, roast almonds, hazelnut, toffee apple and an array of spices including cinnamon, clove and vanilla. The robust, spicy palate yields baked apple and raisin flavours followed by a wave of cinnamon, clove and nutmeg. Warming spirit tingle, almost prickly. Drying aftertaste of orange zest, vanilla, nutmeg and old leather. Delord 25 years old is elegant on the nose with peppery and spicy notes, it is in the mouth that this Armagnac will unveil its complexity of cocoa, spices (pepper), well-blended tannins, vanilla, rancio (walnut). A great Bas-Armagnac eau-de-vie... possibly the best value spirit we do!
'The deep, old copper penny colour is reminiscent of aged tawny Porto; flawless purity. The potent spirit races from the copita in the initial aromatic burst, leaving behind dried aromas of raisins, prunes and herbs; aeration serves to alter the aromatic direction as the bouquet turns biscuity, caramel-like, honeyed, cream sherry-like, and even dark chocolate, with more than a passing perfume of cheese-like rancio; wow. The palate entry is suggestive of bittersweet dark chocolate, cocoa butter, chocolate covered raisins, and dark honey; at mid-palate the taste profile becomes fruitier than the entry and less bitter-sweet, making for a succulent aftertaste that's spectacularly satisfying. Mery Melrose is a modern, organic farmer making stunning Cognac from his small vineyard in Grande Champagne.
The VSOP is a generous beauty, elegant with a winning character. This Cognac has spent at least four and a half years aging in a combination of new and used French oak casks.
EYE: burnished gold color hints at the lush aromas and flavors to come from this spirit.
NOSE: the longer aging is immediately evident with notes of cinnamon, vanilla, and honey, but the wood is balanced with a lively expression of fruit. The scent of dried apricots and figs mingles with rose petals and gigerbread.
PALATE: the first sip saturates the palate with a soft, silky robe of warm spices and tropical fruits, with notes of brown sugar and persimmon emerging with successive sips. The long, fruity finish ends with a gentle sweetness reminiscent of ripe grapes.

This cider is produced from no less than 20 different varieties of apples. This gives it a very nice balance between the sweet, bitter and acidic varieties. After a fermentation process that is modified in its length to produce the “brut”, “demi-sec” and “doux” varieties, and light filtration, it is bottled in order to naturally develop its own natural gas. This gives it the fine bubbles that we are known for.
Tasting Notes:
Pours a hazy amber colour with a thin ring of head. The aroma of dry apples, mild barnyard, hay, glue and vinous notes. The taste is sweet apples, tannic notes, mild must and vanilla. Medium-bodied, good balance, soft carbonation. Best served over ice.
