An incorrect image is shown (not cask strength). Our Peated Single Malt, delivered straight from the cask is our “biggest” and most awarded whisky in our range. In fact it is one of the biggest Australian whiskies available today. The malted barley is “peated” in northern Scotland and exhibits a more “Highland” style peat, which produces an “earthier” rounded peat smoke with minimal “medicinal/iodine” notes.  If you are looking for the ultimate flavour experience that you will continue tasting long after the glass is dry, this whisky is for you Tasting Notes: Nose: A rich subdued peat aroma combined with a natural leathery earthiness with overtones of kumquat and fruit mince tart. Sweet but not sickly.  Palate: The palate reveals a tobacco leaf earthiness with layer upon layer of complex smoky peat that lingers on the lips and palette demanding just one more sip. Finish: Astonishingly long and complex, an exotic mix of experiences.

Our Classic Single Malt, drawn straight from the cask, is the ultimate tasting experience of pure double distilled unpeated spirit. All of the nose and flavour profiles of the Classic Single Malt but ramped up to 11, without dilution, so you can enjoy the whisky as you see fit. Perhaps with a couple of drops of water before indulging. Tasting Notes: Nose: An intensely sweet satin smooth malt with overtones of vanilla, almond meal and jaffa. Palate: The palate is reminiscent of spiced orange Turkish Delight, with a fresh mouth cleansing zestiness all intermingled with malty cereal and cocoa. Rich and sweet without being cloying. This rye whisky is handcrafted from a unique mash bill of Australian heritage rye grain, winter wheat, malted barley and chocolate malt. Our first single cask, rye release. Matured in a Rutherglen Tawny cask and bottled at cask strength.  Tasting Notes: Raspberries, red lollies and dried fruits. Punchy cereal spice and roasted macadamias.

Matured in an ex-Shiraz cask to create a distinctive Australian rye whisky. Our most popular rye expression, the previous batch of this whisky won a silver medal at the World Whiskies Awards 2021. We then finished this batch in an ex-Shiraz cask for an additional few months. Malt profile: Three varieties of Australian malted barley: Atlas, Veloria, Voodoo Cask profile: American Oak, Aussie corn whisky. Finished in an ex-Shiraz cask. Tasting notes: Tasting notes: Buttery scones with raspberry jam and vanilla cream. A delicately spicy finish.

Our Double Wood expression is a reflection of the impact of rich, soft oak on the pure Bakery Hill unpeated new make spirit. Our Classic spirit is initially matured for up to 7 years in American Oak Ex-Bourbon barrels from Jack Daniels, before being transferred to a virgin French Oak ex-wine barrel, shaved back to bare wood, and then given a light toast to highlight the oak itself – rather than any of the previous contents of the barrel. Tasting Notes:Nose: The nose opens with the slightest hint of apricot, coconut and plum, going on to reveal an intermingling of golden syrup and plum pudding warmed by the spicy hint of cloves Palate: Subdued, mouth filling with orange marmalade overtones with the characteristic rich nougat sweetness and well balanced oak Finish: Rounded, well finished and lingering to the very end

Our Peated Single Malt attracts both peated whisky lovers as well as those previously averse to the heavier smokier elements of single malts. In our Peated expression, rather than overpowering the malt with smoke, the peat acts as a complimentary flavour to the sweet, floral and fresh notes of the spirit. Something to savour and enjoy. Tasting Notes: Nose: A subdued peat aroma combined with natural leather and overtones of kumquat and fruit mince tart. Sweet, but not overly so. Classic Single Malt is the whisky that David Baker started distilling over 20 years ago to produce. Victoria’s very own “Speyside” style expression with notes of spiced apple, nutmeg, honey and loads of rich malty sweetness. Tasting Notes: Nose: A complex sweet multi layering of green apples, spiced honey with just a hint of cider. Palate: The flavour ramps up kaleidoscopically from nutmeg through spiced honey to a firm cereal with a malty richness layered on as a finale. Finish: Mouth filling, smooth and lingering, leaving a satisfying warmth. Inspection of the glass reveal amazingly luscious legs of this superb malt whisky.
