Martinique is a French island with the largest number of distilleries in the Eastern Caribbean. Both pot and column stills are used. As on other French islands such as Guadeloupe, both rhum agricole (made from sugar cane juice) and rhum industriel (made from molasses) are produced. These Rums are frequently aged in used French brandy casks for a minimum of three years with 'Rhum vieux' (aged Rum) frequently compared to high-quality French brandies. J.M rum is distilled on Martinique's smallest estate, located in the northeast in Macouba, where the sugar cane grows on 28-degree vertical slopes in rich volcanic soil at the foot of Mount Pelée. Due to its unique location with sea breezes, rainforest, an intense microclimate, and high cloud cover, Rhum J.M. cuts their sugar later than other distilleries (most cut the cane at the end of February or early March, whereas Rhum J.M. does not cut theirs until late March or early April). This practice, combined with the region's peculiar environment are said to be contributing factors to the unique flavour to this unusual rum.

NOSE This rum has a rich nose of fruity notes: candied fruit (candied orange zest), dried fruit (fig, date and prune), quince conserve and the delicious enticing notes of gingerbread (honey, nutmeg, cinnamon and vanilla). Playing a special role in the soul of Saint Pierre for more than 350 years, the Depaz estate is located at the foot of the islands highest mountain, Mount Pelée. In 1902, Mount Pelée delivered a devastating volcanic eruption which impassioned Victor Depaz, the sole surviving family member, to ultimately return to the estate in 1917 to successfully rebuild the Depaz chateau and the distillery. It’s these volcanic ashes that today continue to fuel the rich development and production of the sugar cane that permeates Depaz with its explosive taste and character.

V.S.O.P. Rhum patiently ages in our cellar for a minimum of four years before being bottled in Martinique. The Rhum spends three years in re-charred Bourbon barrels and then is transferred to new American oak barrels for at least one more year before it is ready to be bottled. Its full-bodied and intense flavour makes it the ideal rum to drink neat, with an ice cube, or in cocktails. Tasting Notes: Nose: Exotic fruit notes are dominant in the initial impression (lychee, mango, flambeed banana). The aromatic palette reveals a hint of quince conserve while enhancing the delicate aroma of vanilla bean and a mellow woody undertone. Palate: Exotic fruit recalls the aromatic notes of this rum, which are heightened on the palate by sweet spices like vanilla and cinnamon. Rhum Agricole is both a distinctive production methodology and, more recently, an AOC (Appellation of Origin) protected product when produced according to strict criteria in the French protectorates of Martinique and Guadalupe. Primarily the distinction is the use of fresh cane juice instead of molasses or other refined sugar products and column distillation. The results are generally dryer and more aromatic Rums of elegance and refinement. HSE's blanco is reputedly the only rhum/rum in the world which is progressively reduced from the 70% distillate down to 50% alcohol over a period of two years, partly via evaporation. Others typically reduce immediately after distillation, and then bottle shortly after or within a few months. The former technique allows the rhum to 'rest' and develop far longer than any other white rum, preserving the delicate aroma and mouth-feel.

Depaz is one of the leading distilleries in Martinique, a small island in the French Caribbean.This Rhum Blanc is a special release exclusively harvested on the skirt of the Montagne Pele with its typical soil. The fresh cane juice is fermented for 48 hours, then distilled in the typical copper column still. It comes out at 70% alcohol and it is slowly reduced with water over 60 days.
