X.O. — Extra Old — is the designation most associated with the pinnacle of Cognac craftsmanship, and since 2018 carries a legal minimum age of ten years. In practice, the expressions in our selection run considerably older, many aged 15 to 30 years before bottling.
The range here reflects the full ambition of the X.O. category. Paul Giraud's estate bottles several distinct X.O. expressions — the Irisdis, Rocky, Sail, Nicolette, and the XO Heylante carafe among them — each drawing from the same Grande Champagne terroir but expressing it through different barrel selections and bottling formats. Normandin-Mercier's 30-year Grande Champagne X.O. is one of the appellation's most celebrated long-aged expressions, available both in standard bottle and carafe. Jean Fillioux's Cep d'Or (13–15 years) and Très Vieux (25–30 years) demonstrate the spectrum of what X.O. can mean. François Voyer's Gold 20–30-year expression and the Lhéraud Charles VII X.O. bring further breadth and character.
At this level, Cognac is best approached with time and attention: a wide glass, a few minutes to open, and very little else required.
