V.S. — Très Spéciale, or Very Special — is the entry-level designation of French Cognac, denoting a spirit aged for a minimum of two years in oak. What the designation doesn't tell you is that in the right hands, a V.S. can be one of the most expressive, characterful pours in the cellar.
Our V.S. selection draws from some of the most respected small-domaine producers in the Charente: Paul Giraud and François Voyer in Grande Champagne, Mery Melrose working organically from his estate vines, and the Grosperrin-selected Mestreau expression. These are not entry-level in the pejorative sense — they are young Cognacs made with the same care and terroir-driven focus as expressions three or four times their age.
At this stage of maturation, the fruit is vivid and unguarded: fresh stone fruit, citrus zest, delicate floral notes and the first soft whispers of vanilla from new Limousin oak. They shine in a long cocktail, over ice, or as a light digestif on a warm evening.
If you're new to Cognac, V.S. is the ideal starting point. If you already know the region, these expressions are a reminder of how much character a young spirit can carry when the terroir and the producer are right.
