V.S.O.P. — Très Vieille, Supérieure, Ordinaire et Pâle — requires a minimum of four years in French oak, and it is in this bracket that Cognac begins to reveal its full range of nuance. The rough edges of youth give way to something more measured: integrated oak, the first development of dried fruits and spice, and a texture that lingers on the palate.
Our V.S.O.P. range spans some of the appellation's most distinctive terroirs and styles. Normandin-Mercier's Petite Champagne expression brings a floral, fruit-forward elegance from its chalky soils. Jean Fillioux's Subtil & So offers six years from Grande Champagne, exhibiting the hallmark richness of the premier cru. Dudognon's 10-year V.S.O.P. — significantly older than the minimum — is a testament to how patience transforms the category. Paul Giraud and François Voyer round out the selection with their estate-grown Grande Champagne expressions, each a clear reflection of a single family's land and methods.
