Description

Definition: In EEC terms, Quality Liquor Wine Produced in a Specific Region, (VLCPRD, CE R1493/99); in Spain, fortified wine with the Quality Demarcation Jerez – Xérès – Sherry and indication of age: 15 years of maturing and ageing. Dry oloroso.

Production: Bud musts. Controlled fermentation at 28º C. Fortified with distilled wine alcohol at up to 19.5º. The Palomino enters the racks before entering the Criaderas y Soleras system for physical-chemical ageing through oxidation in oak casks. Aged for at least 15 years. A unique dry oloroso.

Tasting Notes: Bright amber. Intense aromas are characteristic of this type of wine and a hint of dried nuts and fruits. Dry, rich, and with smooth tannins, it is luscious and balanced. A long finish.

Suggestions for consumption : As an aperitif with mature cheese, at meals with red meats and even as an after-dinner drink.

Founded in 1877 in Jerez de la Frontera, Bodegas Williams & Humbert is one of Spain’s most historic sherry producers. With generations of expertise in aging wines and spirits, the Medina family — current owners of the bodega — extended their legacy into the world of rum with the creation of Dos Maderas. This unique rum range blends Caribbean heritage with Andalusian tradition, beginning its life in Barbados and Guyana, where it is aged in ex-bourbon barrels under tropical conditions before being shipped to Jerez for a second maturation in sherry casks.

In Spain, the rum undergoes a double aging process in casks that previously held Palo Cortado and Pedro Ximénez sherries, using the time-honored solera system. The result is a complex, smooth, and richly layered spirit that reflects the character of both regions — tropical depth meets sherry elegance.
