Description

Definition: In EEC terms, Quality Liquor Wine Produced in a Specific Region, (VLCPRD, CE R1493/99); in Spain, fortified wine with the Quality Demarcation Jerez – Xérès – Sherry and indication of age: 15 years. Two ageing periods: biological ageing under a layer of yeast and physical-chemical ageing by oxidation. Natural amontillado.

Production: Bud musts from our best vineyards. Cold, still decanting, followed by fermentation at 22º C. Early filtering, classification by quality and then fortified at 15º with the best-distilled wines before going on to the racks. Put into the classical Jerez Criaderas y Soleras system of dynamic ageing in the 12th criadera, where the biological ageing takes place under a layer of yeast. Traditional oak casks, preferably American, with capacities of 30 and 36 @. Aged for at least 8 years, after which it is transferred to the 3rd criadera for an additional 7 years of natural ageing by oxidation until it reaches the solera. It is then removed for consumption.

Tasting notes: Brilliant hues of old gold and amber. Pungent, intense and complex on the nose, with a subtle note of the fino sherry it had once been and a hint of dried nuts and filberts. Dry, with excellent acidity; a long, full-bodied and elegant palate. A delightfully expressive and unforgettable finish.

Suggestions for consumption: An excellent aperitif and perfect with cheese, ham or seafood. An excellent aperitif and perfect with cheese, ham or seafood.

Bodegas Williams & Humsbert

Founded in 1877 in Jerez de la Frontera, Bodegas Williams & Humbert is one of Spain’s most historic sherry producers. With generations of expertise in aging wines and spirits, the Medina family — current owners of the bodega — extended their legacy into the world of rum with the creation of Dos Maderas. This unique rum range blends Caribbean heritage with Andalusian tradition, beginning its life in Barbados and Guyana, where it is aged in ex-bourbon barrels under tropical conditions before being shipped to Jerez for a second maturation in sherry casks.

In Spain, the rum undergoes a double aging process in casks that previously held Palo Cortado and Pedro Ximénez sherries, using the time-honored solera system. The result is a complex, smooth, and richly layered spirit that reflects the character of both regions — tropical depth meets sherry elegance. Standout expressions like the Dos Maderas 5+5 PX and the premium Dos Maderas Luxus have earned global acclaim for their craftsmanship and distinctive flavor profiles, embodying the brand’s motto: “One spirit, two cultures.”
