Description
Definition: In EEC terms, Quality Liquor Wine Produced in a Specific Region, (VLCPRD, CE R1493/99); in Spain, fortified wine with the Quality Demarcation Jerez – Xérès – Sherry, biologically aged under a layer of yeast.
  • Type of grape: Palomino.
  • Vineyards: Jerez Superior. Pago Añina y Carrascal.
  • Alcohol content: 15% Alc/vol.
  • Type of grape: Fino Sherry
  • Sugar content: Very dry, less than 1 gr. /l
Production: Bud musts from our best vineyards. Cold, still decanting, fermentation at 22º C. Early filtering, classified by quality and fortified at 15º with the best distilled wines sent to the traditional racks. Put into the classical Jerez Criaderas y Soleras system of dynamic ageing in the 9th criadera, where the biological ageing takes place under a layer of yeast. Traditional oak casks, preferably American, with a capacity of 30 and 36 @. Aged for at least 8 years, passing through the different criaderas until it reaches the solera, from which it is drawn out for consumption. Fino sherry, very mature, naturally pungent in the amontillado style. Tasting notes: Brilliant hues of old gold. Sharply intense and complex aromas reminiscent of the yeast layer, with a note of almond. Very dry on the palate, with a perfect level of acidity. Full-bodied, assertive and elegant with a lingering finish. An extremely expressive and unforgettable wine. Suggestions for consumption: Ideal as an aperitif with cheese, ham and seafood.

Bodegas Williams & Humsbert

Founded in 1877 in Jerez de la Frontera, Bodegas Williams & Humbert is one of Spain’s most historic sherry producers. With generations of expertise in aging wines and spirits, the Medina family — current owners of the bodega — extended their legacy into the world of rum with the creation of Dos Maderas. This unique rum range blends Caribbean heritage with Andalusian tradition, beginning its life in Barbados and Guyana, where it is aged in ex-bourbon barrels under tropical conditions before being shipped to Jerez for a second maturation in sherry casks.

In Spain, the rum undergoes a double aging process in casks that previously held Palo Cortado and Pedro Ximénez sherries, using the time-honored solera system. The result is a complex, smooth, and richly layered spirit that reflects the character of both regions — tropical depth meets sherry elegance. Standout expressions like the Dos Maderas 5+5 PX and the premium Dos Maderas Luxus have earned global acclaim for their craftsmanship and distinctive flavor profiles, embodying the brand’s motto: “One spirit, two cultures.”
