60 ml Taylor & Smith Special Release Barrel Aged Gin10 to 15 ml demerara sugar syrup2 dashes Angostura bitters (try adding orange and or chocolate bitters for extra depth)Ice sphere or other quality block ice orange twist and clove to garnish
Method: Place Gin, your preferred amount of Demerara sugar syrup and bitters in a stirring glass. Add quality block ice and stir down to your preferred level of dilution. Strain over an ice sphere, or other quality block ice, garnish and serve.
Demerara Sugar Syrup: Place equal parts by weight of Demerara sugar and water into a food processor. Mix on high until all sugar has dissolved into solution.

This botanically rich spirit incorporates botanicals from local grassland and coastal courses around Scotland which gives the gina unique juniper and floral flavour. To ensure Golf Gin was truly representative of local golf courses, the team of distillers at Eden Mill sourced botanicals such as Seaweed from St. Andrews Links and Gorse Flower from Braids in Edinburgh to name a few, making this Gin every golfer’s G & Tee of choice.
Nose: Hints of juniper pine in a forest of lavender and spruce trees. There is a slight tang of the sea that underlies it.
Palate: The juniper dominates as it should but there is a sweetness from the gorse to it that makes sure it isn’t over powering. The heather and lavender add a floral note while the spruce and coring provide a distinct peppery finish.

We have aged a 59% expression of our original gin in custom coopered barrels which formerly held American bourbon, then most recently Barossa Valley shiraz – recharred and now giving new life to our shiraz barrel aged gin. This overproof blush coloured spirit is soft and silky with a gentle shiraz note and rich oaked rye back-note. It’s punchy, yet still maintains the vanilla and floral notes which define Prohibition gins – perfect on ice, with soda or in your favourite cocktail!

V.S.O.P. Rhum patiently ages in our cellar for a minimum of four years before being bottled in Martinique. The Rhum spends three years in re-charred Bourbon barrels and then is transferred to new American oak barrels for at least one more year before it is ready to be bottled. Its full-bodied and intense flavour makes it the ideal rum to drink neat, with an ice cube, or in cocktails.
Tasting Notes:
Nose: Exotic fruit notes are dominant in the initial impression (lychee, mango, flambeed banana). The aromatic palette reveals a hint of quince conserve while enhancing the delicate aroma of vanilla bean and a mellow woody undertone.
Palate: Exotic fruit recalls the aromatic notes of this rum, which are heightened on the palate by sweet spices like vanilla and cinnamon. The sweetness of gingerbread and floral honey mingles with slightly smoky roasted and woody notes. The texture is structure and even, with a good balance between the different aromatic notes.
Finish: The finish is structured and harmonious, with a nice balance between all the notes of the nose and palate.

Rhum Agricole is both a distinctive production methodology and, more recently, an AOC (Appellation of Origin) protected product when produced according to strict criteria in the French protectorates of Martinique and Guadalupe. Primarily the distinction is the use of fresh cane juice instead of molasses or other refined sugar products and column distillation. The results are generally dryer and more aromatic Rums of elegance and refinement.
HSE's blanco is reputedly the only rhum/rum in the world which is progressively reduced from the 70% distillate down to 50% alcohol over a period of two years, partly via evaporation. Others typically reduce immediately after distillation, and then bottle shortly after or within a few months. The former technique allows the rhum to 'rest' and develop far longer than any other white rum, preserving the delicate aroma and mouth-feel.
