Guillaume Drouin has created this hand-crafted Gin using the art of blending developed for classic spirits. It is produced by distillation of ciders in three small Normandy copper pot stills, and by the distillation of Juniper and seven other aromatic plants typical of the world of Calvados. Each one is distilled separately before being blended in unique proportions for a batch of 2,850 bottles.
This gin is in fact a cider apple eau-de-vie from Normandy in which juniper berries, ginger, vanilla, lemon, cardamom, cinnamon, rose petals and almonds have been macerated. Remarkably well-balanced, it simultaneously reveals finesse and incredible aromatic precision. Proud of its Normandy roots, the nose opens with wafts of apple. Little by little, it becomes liquorice-inspired, herbaceous (juniper) and peppery. Full of energy, the opening on the palate is floral (apple blossom) and fruity (raspberry, blackcurrants). The back of the palate offers freshly cut quarters of apple and a voluptuous nose (apple tart, quince jelly).

The mandrake root, or 'Mandragora Officiarum', is a thing of danger and mischief.
As folklore would have it, the mandrake root screams when pulled from the ground, killing anyone unfortunate enough to hear its cries. When ingested, it is said to excite delirium and madness. But, hey, who believes in folklore?
The mandrake tale takes its cues from folklore and cinema. Harry Potter fans will be familiar with the repotting of the Mandrake seedlings scene in the Chamber of Secrets. The cries are not yet fatal, but capable of ‘knocking you out for a few hours’.
Taking inspiration from this tale, steeped in mystery and legend, our small batch Mandrake Cucumber & Mint Gin melds Albanian juniper with cucumber, mint, coriander seed and liquorice root. We have taken all the bad stuff out and left the good stuff in.

Traditionally, with the absinthe spoon ritual: Place a piece of sugar soaked with Grande Absente on an absinthe spoon placed on the edge of the glass. Light the sugar with a flame. Gently pour the water over it, to slowly dissolve the sugar and tint the liqueur with an opalescent green.
Pour the Grande Absente over shaved ice.
Add a little water only for those who prefer bitter drinks that are not very sweet.

While the Pays d’Auge Calvados requires prolonged aging in oak barrels to flourish, a Calvados produced from apples and pears, and distilled in a column still, offers an aromatic universe dominated by fruit, palatable. from an early age.
For this reason, CHRISTIAN DROUIN preferred to offer for “entry-level” a Calvados partly produced in the establishment he operates in Domfront. This calvados derives its originality from the high percentage of perry pears used in conjunction with cider apples. The soil (schist and granite) and the distillation process (a single distillation) also contribute to its typicality.
It is ideal for the preparation of cooking recipes, apple granita and cocktails requiring a fruity base alcohol.
