Castarede Bas-Armagnac 1978 Tasting Notes: Topazes and sienna robe with orange touches. It offers a nose with complex flavours, which marries animal notes like leather, floral flavours like eucalyptus and fruity flavours like dry fig and blond tobacco. After warming it up, we can smell fur and praline flavours. The mouth effect is frank, the middle of the mouth is powerful with dry fruits aromas, (dry prune, grape, orange bark, almond). Minimum 20 years old, all the way to 30 years old. This cognac provides access to a single vineyard, quality “XO”, very different from the blends of the bigger brands. A very special drink to keep the night going with family and friends. Tasting Notes: Nose: Down among the flowers: touches of jasmine, clove, combined with peach and plums. The old maturation of this Cognac has given it its vanilla aroma and this light and sweet aroma that only an old Cognac has. Palate: The outstanding point is probably the great elegance which is one of the major characteristics of the Premier Cru Grande Champagne, fully represented here by the delicacy of aromas as well as the subtlety of its palate.

We have selected this 'Grande Champagne' Premier Cru of 1992 to celebrate the 140th anniversary of Normandin Mercier business, founded in 1872. Its uniqueness lies in the fact that it has been aged in authentic casks, made by the best Cognac coopers; using hundred-year-old oak trees from the estate ‘La Péraudière’ which were chosen in 1989 for the exceptional subtlety of their grain. The staves were left to dry in the open-air for three whole years, and from these wonderful casks, ‘La Péraudière’ cognac was born. Limited series of 1000 bottles.

At 40 years, the Armagnac's style is definitely apparent. The quality of the oak used is very important, as the right use of a quality barrel will bring complexity and finesse to the Armagnac; elements that can be judged and appreciated after 40 years in contact with the wood. The diversity in crus, vintages, grape varieties and styles has allowed Marc Darroze to work on his "Les Grands Assemblages" (The Great Blends), chosen for their complementary characteristics, the selected Armagnacs in each bottling are of different ages. After over four decades in 400-litre barrels, expect this to have evolved layers of sweet spices, candied fruits, rancio and super soft, round tannins.

The spirit opens with baked apple aromas and then transitions into ripe red apples with some nutty notes from the extensive barrel aging. The Camut line of Calvados always show better with age, as the double distillation, while making them more neutral in their youth, frees the spirit from impurities that show with age.
