Description

Calvados Pays d'Auge 2004, from double distillation in copper pot stills. Aged in old calvados barrels and old Foursquare rum barrels.
The nose opens with notes of ripe apples and honey, before evolving into scents of cinnamon, brown sugar, and toasted wood in a deliciously pastry-like universe enriched by notes of brioche and baba. On the palate, the attack is straightforward, with a fine structure supported by toasted wood. Very rich, the palate also offers a pastry-like balance of sweet baked apple, spice, and dried fruit (almonds, raisins). A note of candied orange completes the gourmet aromatic palette of these calvados. The smooth finish evokes apple pie, strudel, and brown sugar, reminiscent of the finesse of Foursquare rums.

While the Pays d'Auge Calvados requires prolonged aging in oak barrels to flourish, a Calvados produced from apples and pears, and distilled in a column still, offers an aromatic universe dominated by fruit, palatable from an early age.

For this reason, CHRISTIAN DROUIN preferred to offer for "entry-level" a Calvados partly produced in the establishment he operates in Domfront. This calvados derives its originality from the high percentage of perry pears used in conjunction with cider apples. The soil (schist and granite) and the distillation process (a single distillation) also contribute to its typicality. It is ideal for the preparation of cooking recipes, apple granita and cocktails requiring a fruity base alcohol. La Sélection is an Appellation d'Origine Contrôlée calvados.
