The barrels that went into this small batch combined to make an amazing drinker. Nose- Beautiful layering of brandied cherry over a mildly tart cherry. It opens up with time and is reminiscent of cutting into your dessert with your fork which releases cinnamon and baking spices with just a hint of oak to remind you that this is high proof youthful. Palette- A robust rye with dark cherry, burnt vanilla, and spices for days. It's a delicious rye with a weighty mouthfeel. Balance - It's insanely well balanced with the alcohol so perfectly integrated at 115 proof you'll forget its there, but you'll find yourself smiling more and happier with each dram. A bold and authentic whiskey.  The Wild North originates from a judicious blend of 5 and 7-year-old whiskey batches. Selected from the best ingredients the Great Canadian North can produce; spring water from the northern Quebec and barrels of white oak grown in the North American forests.  It takes as much passion and conviction to clear an unknown land as it takes to make a true 100% Canadian Whisky.

A Heritage Ryecorn is the chief ingredient in this Wild Rye. It delivers an earthy, fresh rye bread aroma, toasty/biscuit like sweetness and a classic dry, spicy finish. Their mash bill also includes barley (for sweetness) and wheat (for nuttiness). And finally, adding a small amount of chocolate malt. You will notice this on the finish, as it lingers on the pallet, urging your next sip. After fermenting with a selection of speciality yeasts, they finish the process with the lid open. This allows for a secondary fermentation as the mash is infected with local airborne yeasts, particular only to Backwoods. The wash is distilled twice in a custom-designed copper pot still, and a very tight cut is made to ensure that only the gentlest portion of the hearts is taken.
