TASTING NOTES
Nose: Very pronounced on ashes, caramel, grilled meat and incandescent tobacco notes
Palate: First very smoky, very opulent, then peaty, rich and balanced. There are also vegetal notes of oregano, thyme, and rosemary and strong flavours of dried straw and roasted malt.
Finish: Long, rich and ashy. It reminds me of a campfire on which a nice piece of meat has been grilled.

SAINT JAMES “Single Cask” rum reflects a selection based on exceptional years for Martinique AOC rum. 1999 was an optimum year for the harvest, offering a rum enriched with aromas of sweet ripe fruit.
Eight casks and ten long years of controlled ageing have achieved a fabulous Martinique Agricole rum.
Tasting Notes:
Colour: Clear and bright with dark mahogany glints.
Nose: The nose is marked by intense aromas against a warm background. Notes of roasted coffee and chocolate on a woody base, against a background of fruity, spicy notes of dried fruit and nutmeg.

Palate: Intense, warm and enveloping with a farandole of fruit notes, like a basket of candied fruits coated with intense dark chocolate. It reveals a great delicacy and leaves one dreaming while tasting it.
Finish: Very persistent with notes of cocoa beans.

TASTING NOTES
Nose: Fruity and smoky with mango, apricot, pepper, and hints of dried meat.
Palate: It develops a fat and opulent character, with notes of candied fruit, well-cooked caramel, and sherry vinegar. A side of barbecued chips gives it a gourmet aspect.
Finish: Like a Boucané chicken, a typical West Indian dish cooked on the grill. It is slightly smoky and combines with sweet aromas.

Fiji is a great producer of sugar cane and therefore molasses (89,384.00 tons in 2018). A great part is exported but a part is used by the sole distillery of the island in order to produce rum in pot stills. These Fiji rums have a distinctive nose, powerful with spices.
TASTING NOTES
Nose: First and foremost, elderflower notes of this Fiji, then red fruits such as cherry and raspberry are quite dominant mingling with curious scents of hay and Frangipane.
Mouth: Oily and smooth with a hint of acidity. We find red fruits again, this time redcurrant and blackcurrant. The hay has changed to a smoky, peppery touch.
Finish: Well balanced, long woody and spicy. It has some of the Indian food flavours of our previous Fiji bottlings.

The Belizean rum industry is dominated by Travellers Liquor, a distillery based in Belize City. The Belize produces a sugar cane of excellent quality which represents 50 % of the exports of the country.
Tasting Notes:
Nose: Sandalwood, cinnamon, and a symphony of sweet spices. A floral touch of elderflower, the prelude of an intense mouth.
Palate: Powerful with still both the spicy and floral notes. It is a very well-balanced rum, its high abv makes for a contained powerfulness.
Finish: Long and expressive, roasted subtle notes of 75% cacao.

Until the beginning of the 2000's, Mauritian law dating back from the British colonial era enforced distillers to distil at high abv, above 93 %. The island has experienced a true revival and historic distillers have been producing quality aromatic rums ever since for the export market Nose: Like a lovely stroll through spice stalls. Black pepper, cumin, rice, starchy notes but also some sweetness with salted caramel aromas. Mouth: Well-rounded and fruity. It then develops aromas of red berries (strawberries, gooseberries), then evolves to pure cane juice thus evoking its raw material. Finish: Surprisingly, despite being nice and easy to begin with, it has quite a bitter finish, giving it a delicious balance.

After 6 years aging in oak barrels in the great tradition of aged HSE rum, this vintage agricole rum has spent an additional 12 months maturing in Highland Single Malt whisky barrels.
The initial bouquet opens with menthol aromas which give way to white flesh fruit. Swirling awakens subtle hints of green almond and orange blossom. The flavour’s refreshing attack allows notes of smoked oats, nectarines, mint humbugs and spices typical of aged rhum to develop.
