Our Classic Single Malt, drawn straight from the cask, is the ultimate tasting experience of pure double distilled unpeated spirit.
All of the nose and flavour profiles of the Classic Single Malt but ramped up to 11, without dilution, so you can enjoy the whisky as you see fit. Perhaps with a couple of drops of water before indulging.
Tasting Notes:
Nose: An intensely sweet satin smooth malt with overtones of vanilla, almond meal and jaffa.
Palate: The palate is reminiscent of spiced orange Turkish Delight, with a fresh mouth cleansing zestiness all intermingled with malty cereal and cocoa. Rich and sweet without being cloying. A brilliant balance of sensations.
Finish: The finish is deep and enveloping with lingering malt richness.

Our Peated Single Malt, delivered straight from the cask is our “biggest” and most awarded whisky in our range. In fact it is one of the biggest Australian whiskies available today.
The malted barley is “peated” in northern Scotland and exhibits a more “Highland” style peat, which produces an “earthier” rounded peat smoke with minimal “medicinal/iodine” notes.

Tasting Notes:
Nose: A rich subdued peat aroma combined with a natural leathery earthiness with overtones of kumquat and fruit mince tart. Sweet but not sickly.

Classic Single Malt is the whisky that David Baker started distilling over 20 years ago to produce. Victoria’s very own “Speyside” style expression with notes of spiced apple, nutmeg, honey and loads of rich malty sweetness.
Tasting Notes:
Nose: A complex sweet multi layering of green apples, spiced honey with just a hint of cider.
Palate: The flavour ramps up kaleidoscopically from nutmeg through spiced honey to a firm cereal with a malty richness layered on as a finale.
Finish: Mouth filling, smooth and lingering, leaving a satisfying warmth. Inspection of the glass reveal amazingly luscious legs of this superb malt whisky.

Bakery Hill Distillery is proud to introduce the second edition of Eldorado – our Australian Sherry (Apera) barrel matured single malt whisky. In this follow up to one of 2020 hottest Australian whiskies - We have ramped up the intensity and vibrancy of the sherry barrel influence to produce a rich, sprightly, dense, but ultimately drinkable single malt. Eldorado Second Edition showcases the complex integration between American oak and French oak maturation on the traditional Bakery Hill Classic spirit. After distillation the unpeated spirit was placed in a Seppeltsfield Barossa Valley Apera cask (2nd fill) for 18 months, before a final maturation in American Oak ex-Bourbon cask for a period of just on 3 years. This whisky is dangerously drinkable from the bottle at 55% but may also improve with a couple of drops of water, and certainly with time in the glass. Only 345 bottles in total available, each bottle is individually numbered, includes detailed production notes and a limited edition collector tasting card.

The Bakery Hill and Hop Nation Brewery collaboration has now been consistently delivering to a cult audience for over six years.
2024 marks the fifth release of the Hop Nation Imperial Stout beer - The Kalash. A beer which has spent many months in Bakery Hill whisky barrels to produce a unique and rich flavour profile.
Following on from the success of 2020 and 2022 editions, we have once again reclaimed a number of these barrels -freshly emptied of beer, and refilled with 5 year old Bakery Hill whisky. The whisky has then spent 2 additional years finishing in the ex-stout barrel before decanting and bottling.
In this 2024 third edition of Blunderbuss, we have ramped up the tasting experience even further with one key introduction - Peat. That's right, this is the first Blunderbuss produced using Bakery Hill Peated Malt.

Bakery Hill Double Wood Single Malt Whisky 46% 500ml

Our Double Wood expression is a reflection of the impact of rich, soft oak on the pure Bakery Hill unpeated new make spirit. Our Classic spirit is initially matured for up to 7 years in American Oak Ex-Bourbon barrels from Jack Daniels, before being transferred to a virgin French Oak ex-wine barrel, shaved back to bare wood, and then given a light toast to highlight the oak itself – rather than any of the previous contents of the barrel.
Tasting Notes:Nose: The nose opens with the slightest hint of apricot, coconut and plum, going on to reveal an intermingling of golden syrup and plum pudding warmed by the spicy hint of cloves
Palate: Subdued, mouth filling with orange marmalade overtones with the characteristic rich nougat sweetness and well balanced oak
Finish: Rounded, well finished and lingering to the very end

We were exceptionally lucky to have acquired a fresh Muscat Cask from an acclaimed winemaker (and his creative kids) which we filled with 6 year old Peated Whisky. A further 2 years maturation in the French Oak has produced a delightful sweet, salty and peated Single Malt Whisky ready for your enjoyment.
The sweetness of the Muscat is balanced with the rich, earthy and delightfully smoky elements of Bakery Hill peated whisky. This whisky perfectly encapsulates the seemingly magical process of transformation taking place over time in the quiet and peaceful darkness of a special and very loved oak barrel.
