Three Foxes Distillery

Three Foxes Distillery is a family-run operation with roots dating back to 1901, when their great-grandfather began distilling ouzo to pair with seafood in his restaurant. Embracing a philosophy of “slow drinking,” he passed down a love of craft and careful botanical blending through four generations. After migrating to Australia, the family quietly continued their distilling tradition, supplying spirits to local venues purely by word of mouth.

In 2019, the youngest member of the family, Sarkis, teamed up with his creative friend Alec to bring the brand into the modern age. By 2023, Three Foxes had grown into a full-fledged distillery with a vibrant, personality-filled space in Heidelberg West. In 2025, they opened to the public—complete with vintage décor, good music, and a disco ball over their custom-built pot still—blending tradition, creativity, and a whole lot of soul.
