Depaz Vintage 2002 is aged for a minimum of 11 years in selected small oak casks. The result is a unique palate bursting with aromas.   Tasting Notes: Nose: Mature rum with complex wealth of aromas. Delicately spiced notes. Palate: A blend of spices, toasted dried fruits, vanilla coffee, vanilla pastry, chocolate, rich cocoa, rose and violet jam. A very fine aged rum which develops bold yet balances aromas. Perfect Pairings: The softly spiced notes of Depaz Vintage 2002 go perfectly with vanilla-grilled prawns served with a plantain mousseline. It is also a particularly delicious accompaniment to a seasoned tuna tartare or vegetarian chillies served with a drizzle of olive oil.
Heralding from the paradise isle of Martinique, in the lush French West Indies, Depaz Rum is born from the rhum agricole methods of production and features the exclusive use of luxurious estate-grown fresh cut sugar cane. Depaz rums proudly hold the enviable French AOC - Appellation d’Origine Controlee – designation for Rums Agricole, confirming its strict adherence to precise standards of excellence. The Depaz estate history can be traced back to 1651 when it was established by the governor Jacques Duparquet. The AOC Rhum Agricole de la Martinique restricts production to the short best season for the cane to pack aromas, compels that all and only the fresh juice of the cane be used, contrary to 95% of the world rums using the left-overs (Molasses, crushed stalks) of the sugar refining industry. Agricole Rum belongs to the world of cognac or Armagnac, whenever Traditional Rum (also known as Industrial) is in the grappa / pomace world. Probably the best of Martinique rums, because on 8th of May 1902 the Montagne Pelée volcano erupted killing the 30000 inhabitants of the town of St Pierre at its foot. The Depaz plantation covered in ash could resume its sugar cane crops only many years later, but with very increased Yields and the best quality of cane juice, thanks to the fertilising properties of the layer of ash. A very small compensation for a terrible drama.
