Nose: Strong herbal presence, gingerbread and citrus punch through with pine notes of juniper that sit the background. Incredible and powerful aromatic presence in the glass even at 40% abv. The juniper, pine and berry aromas start to shine through with a sneaky background tone of malt biscuit, lemon and the native Australian bush.
Taste: Clean with a huge aromatic lift and a complex pallet. A juniper punch. Incredible herbal top notes, citrus middle and aromatic floralness for length and finish. A gentle warmth helps carry the complexity of the gin, finishing softly and slightly dry, with a wonderful, final hit of strawberry gum.

The fresh spirit of Tasmania?s ancient Huon Pine, iridescent abalone shell and pristine water. A nod to a London Dry, our Dry Gin features the four key botanicals of sage, abalone shell, Huon Pine needles and red grapefruit. Fresh sage is grown in our distillery garden and we source the shell whilst on family abalone dives. Once cleaned, the shell is dried and broken into tiny pieces to infuse in the gin. Abalone shell, used in Chinese medicine, is a calcium carbonate to neutralise the acids and adds a slight salinity. Huon Pine (Lagarostrobos franklinii) is a species of conifer native to Tasmania. It is found by the edge of rivers and is an incredibly slow growing, revered local timber. The needles provide pine notes that differ to juniper and add to the complexity of the dryness.

60 ml Taylor & Smith Special Release Barrel Aged Gin10 to 15 ml demerara sugar syrup2 dashes Angostura bitters (try adding orange and or chocolate bitters for extra depth)Ice sphere or other quality block ice orange twist and clove to garnish
Method: Place Gin, your preferred amount of Demerara sugar syrup and bitters in a stirring glass. Add quality block ice and stir down to your preferred level of dilution. Strain over an ice sphere, or other quality block ice, garnish and serve.
Demerara Sugar Syrup: Place equal parts by weight of Demerara sugar and water into a food processor. Mix on high until all sugar has dissolved into solution.

We distill our distinct small-batch handmade gin using Huon Valley apples to form our uniquely crafted Eau de vie. 17 botanicals, both contemporary Tasmanian and traditional are added including Sweet-scented Kunzea, hand-harvested Kombu, Tasmanian Pepper Berries, and Leatherwood Honey, Juniper, Coriander, Orris, Angelica, and Blood Orange. The water that we use comes from a lake of snowmelt at Mount Field National Park that feeds directly down to our distillery.
Taylor and Smith Gin is evenly balanced, complex and aromatic making for a lovely Dry Martini or Gin & Tonic with cucumber.
Additional serving suggestion:
Pomegranate and Strawberry Collins
2 tsp pomegranate jewels
3 strawberries
60 ml lemon juice
20 ml sugar syrup (vanilla if possible)
45 ml Taylor & Smith Gin
Soda to top
Muddle 1 tsp of pomegranate jewels and the strawberries in a Boston glass or tin. Add lemon juice, sugar syrup, and gin. Shake with ice. Strain into a highball glass with ice. Top with soda and drop the second tsp of pomegranate jewels into the glass. Garnish with a strawberry fan.
