In the oak casks used for aging white wines in Japanese wineries, we matured Sake (junmai-shu) brewed by us and then used the Sake Cask to wood finish for Togouchi whisky. With a light fruit scent and a moderate acidity derived from white wine and Sake, a sweetness like brown sugar derived from the wood finish, the harmony of sweet taste with the mellow fruity aroma is enjoyable.

Nose: Ester, Fruity
Palate: Mellow brown sugar sweetness, moderate acidity.
Finish: Mellow with moderate acidity and sweetness.

Handcrafted from three varieties of Australian malted barley and matured in an Aussie corn whisky cask for over three years. We then finished this batch in an ex-Shiraz cask for an additional few months.
Malt profile: Three varieties of Australian malted barley: Atlas, Veloria, Voodoo
Cask profile: American Oak, Aussie corn whisky. Finished in an ex-Shiraz cask.
Tasting notes: Tasting notes: Buttery scones with raspberry jam and vanilla cream. A delicately spicy finish.

This new Kornog combines the notes of ageing on the seaside with the softness of Andalusia. We are talking about maturation in Sherry Butt... and more specifically in Pedro Ximenez.
Here, with the Pedro Ximenez, a variety of Sherry produced in the south of Andalusia, the aromas are powerful and fruity, around an elegant dryness.
Colour: amber
Nose: rich from plum to fig to coffee
Palate: In the first mouth we find aromas of nuts and a second one on bitter orange subtly cocoa.
Finish: Soft and long, leaving a nice fruity and fat veil! To be enjoyed with a square of dark chocolate.
