This precious moment inspired this combination of spirits, pouring into a shimmering glass decanter fused to a night-colored ceramic base.  Clase Azul Tequila Gold is an incomparable tequila joven, a blend that combines Clase Azul Tequila Plata with a special reposado tequila matured in French oak casks and an Extra Añejo aged in American whiskey casks and finished in sherry casks. TASTING NOTES Colour: Soft amber with golden sparkles. Body: Medium body. Aroma: Agave syrup, green apple, orange peel, fresh fig, raisins, light note of almond and walnut. Taste: Toasted wood, fig, green olive, ginger, cocoa / dark chocolate. PAIRING Recommended with seafood and fish with high-fat content (tuna, salmon, octopus, lobster, shrimp, mussels, and clams) cooked with butter and yellow lemon (avoid limes). Kalamata olive tapenade and brie cheese tapas. Semi-bitter or white chocolate with citrus jam or citrus ice cream. Entirely crafted by Michel, Bere Barley is a wild variety of barley, sown and harvested in Orkney, floor malted dried in summer 1986, distilled the 19th November 1986 in Scotland. Michel dreamt to produce a low yield whiskey following the pristine process.  “Tri Juncta in Uno” (Most Honorable Order of the Bath Motto) is the Latin translation of “three in one”. This cognac comes from the family property of the cognac merchant who sold it to us. It remained in the same family for 60 years, stored at its original location, a huge paved cellar, until we transferred it to government-controlled cellars in 1999. The owner's chateau was occupied by the German Wehrmacht and the archives dispersed at the end of the war, making it impossible to prove it dates back to before 1944. The end of the war brought with it widespread pillaging, both by occupying forces and local inhabitants This cognac's lightness and delicate aromas make it atypical for its cru. It, therefore, most certainly comes from a limestone soil. Surprising vitality yet softness and roundness, and an unforgettable prune palate. This is proof that even smaller crus can produce wonders! Deep amber colour.
