Pays d'Auge is a sub region of Calvados, where the oldest orchards are found and double distillation under wood fire is compulsory. This region has the highest reputation for quality Calvados. Roger Groult 8 Years Old Calvados is already showing aromas and flavours of stewed apple, honey, cinnamon, vanilla and has a silky texture. This eight-year-old Calvados from Roger Groult expertly balances the freshness and fruitiness of youthful Eaux-de-vie with more mature cinnamon and vanilla flavours from the ageing process. This can be enjoyed with ice as an aperitif, at room temperature after dinner, or with the cheeseboard. A good starting point for discovering Calvados, which would also pleased connoisseurs.

The VSOP Dudognon Cognac is a young Cognac of great finesse. It develops aromas of vanilla, woody and exotic fruits. As our ancestors taught us, we distil over a wood fire in two copper stills dating from 1901 and 1936. The Cognac thus collected is aged in new Limousin oak barrels without sugar, wood or caramel. VSOP can be enjoyed as an aperitif on ice or in cocktails. It will go well with a fresh sheep’s cheese or Roquefort cheese. To celebrate, Jean Fillioux has reserved for Cerbaco a barrel of their 1992 vintage just bottled as a Special Cerbaco Label. Vintage cognacs are as rare as hen’s teeth, even more so from the best part of Grand Champagne, and 1992, freshly bottled, perfectly proves the superiority and individuality of artisan production. Harvested and distilled in 1992, this Cognac was matured in a French recent loose grain oak cask, in a cool damp cellar. The new kid of the range has, like all the little ones, been the subject of special attention. I thought it would be interesting to age the last year of the century in a separate and unique cellar. The entire 1999 harvest has aged in the cellar of Villeneuve-Haut, slightly less humid than those of Montendres. It was bottled at the end of 2017. Aromatically, it is the bridge between the flower of Napoleon and the fruits of the old reserve (X.O.). The aroma of Napoleon's vine flower intensifies and becomes more captivating; the fruity side of the old reserve appears. This combination of aromas, as well as the aging in dryer cellars, give a higher liveliness and make it a more "intense" cognac. Its success with our amateur customers confirms us in the style of the house: single year and single vintage cognac.
