Description
Overaged Malt Whisky is a vatting of single malts aged between 12 and 27 years in oak casks and resulting from a cognac (double) distillation method with a mash exclusively made of Malt (germinated barley). Nose: Dried flowers, flaxen tobacco, sherry wine, fat almond, a little smoked. Palate: Fruity, powerful and long in the mouth. Aimed at a balance between new pure young malts and fathomless maturity of older ones. End of mouth: Sherry roundness enhanced by a slightly smoked.

Originally from Belgium, Michel Couvreur began his career making wine in Burgundy in the 1950s. Frequent trips to Scotland for fishing and business led to a deep appreciation for traditional Scotch whisky production — especially the use of ancient grains and rare sherry casks.

As modern whisky-making began shifting toward industrial methods, Couvreur resisted the change. In the 1970s, he returned to France to be closer to the source of authentic sherry casks and dug a unique cellar in Bouze-lès-Beaune, Burgundy — midway between Andalusia and the Scottish Highlands.

There, Scotch whisky matures in rare Pedro Ximénez and Palomino sherry casks, stored in a 500-foot underground tunnel naturally humidified by springs. This environment accelerates aging and allows vibrant floral and fruity aromas to develop.

A hidden room called “The Paradise” houses rare, sealed demijohns — a tribute to Couvreur’s belief in preserving tradition. His whiskies remain a rare example of old-world craftsmanship in a modernising industry.
