Subtil & So, the new VSOP Cognac Grande Champagne by Jean Fillioux. With the noble bottling, the house once again proves that the Grande Champagne, originally known for its old cognacs, can also produce excellent younger qualities. The proof: a coveted gold medal from the Spirits Selection by Concours Mondiale 2021 and a wonderfully harmonious profile of fruity freshness and warm spiciness. The 4 to 6-year-old VSOP comes from the picturesque La Pouyade winery, which has been family-owned since 1894 and is completely independent to this day. It is surrounded by 25 hectares of the finest white wine grapes. They thrive in the "Golden Triangle", the heart of Grande Champagne. They are cherished and loved in the fifth generation by Christophe Fillioux and his family, who are one with their vineyard. You can taste that in their extremely aromatic cognacs – and today they are valued around the world. Tasting Notes: Nose: fruity and delicately floral. The ageing process continues in old barrels in a damp cellar. A progressive reduction is made, with distilled water (max 5% of diminution every 3 months). Paul Giraud XO Rocky 25 years - The Vieille Réserve or XO is often the favourite cognac of our Grande Champagne lovers, especially ladies. This cognac expresses all the fullness of the fruity aromas typical of a Grande Champagne, aged for a long time in oak barrels. To fully appreciate this cognac, take time, sit in a good chair and heat the glass with the palm of your hand. The trip to a stone fruit orchard can begin. At the beginning of the tasting, the aromas of fresh fruit at the beginning of summer - like peach or apricot - appear. As the glass warms, aromas of riper fruit, more oxidized by the sun, are revealed, such as plums, prunes and Agen prunes. These are the fruits of late summer: hot, matured, and stewed. At the end of the tasting, spices appear then the vanilla side of the oak barrel. Round and mellow, this cognac is easily savoured. Another remarkable point, the length in the mouth, so characteristic of the Grande Champagne. The combination with a chocolate dessert (such as a Black Forest or a fondant) is quite appropriate.

This vintage Cognac comes from a farm of around twenty hectares of vines called "La Petite Chapelle", located in the town of Champmillon. The two plots that produced this Cognac have been cultivated in organic farming since 1990 by a single woman, having taken over her father's activity when he died. It is, therefore, one of the oldest organic productions in the Cognac region. This cognac is typical from a beautiful Fins Bois of ten years old, with its fresh fruit and citrus fruits fawner notes. On the nose, distillation aromas have left and it still stays fresh grapefruit notes, which reminds some white wines. There is also warmer notes of white peach skin at the sun, and apricot. In the mouth, freshness and naturality of this cognac are striking. We find again these fruity notes, but they are extended with more complex aromas, like a bunch of dried flowers forgotten on a table by a summer day. On final, floral notes are amplified (jonquil, narcissus), quickly overlapped by grapefruits notes, zest of orange, and fresh spices. A beautiful cognac.

The Normandin Mercier 1976 Cognac is a single vintage cognac that has been created with full respect for the purest methods of cognac production. The eaux-de-vie was first aged for 18 months in new oak barrels. These were then toasted slightly to further allow for the aromas to be infused to the liquid within. Finally the eaux-de-vie was moved to ancient barrels to complete the aging process. Each step was overseen by the BNIC. This cognac was well-deservedly awarded the gold medal in the International Wine and Spirits Competition 2016. Well balanced, both on the nose and on the palate. ?C?pages? translates from French as ?grape varieties?, and refers to the three different grape strains used in this Cognac bottling. These grapes are: Colombard, Folle Blanche and Ugni Blanc. Each grape provides something different: Colombard provides power and depth, Ugni Blanc gives structure and balance, and Folle Blanche lends high tones and finesse. Grosperrin are better known for bottling ultra specific, single varietal Cognacs, so this is an interesting step from the producer. Each of the grapes used to make this Cognac come from the premier cru of Grande Champagne. This Cognac contains a blend of several vintages, from 2011, 2012, 2013, and 2014. After distillation, the spirit was aged for a minimum of 4 years in French oak casks. The final product delivers notes of fresh bright grapes, apples, some acacia honey, dried flowers, peppery spice, vanilla, creamy butter, spiced oak, and toffee. Once again, Grosperrin have produced a VSOP that is a cut above other Cognacs in this age grade.

The new kid of the range has, like all the little ones, been the subject of special attention. I thought it would be interesting to age the last year of the century in a separate and unique cellar. The entire 1999 harvest has aged in the cellar of Villeneuve-Haut, slightly less humid than those of Montendres. It was bottled at the end of 2017. Aromatically, it is the bridge between the flower of Napoleon and the fruits of the old reserve (X.O.). The aroma of Napoleon's vine flower intensifies and becomes more captivating; the fruity side of the old reserve appears. This combination of aromas, as well as the aging in dryer cellars, give a higher liveliness and make it a more "intense" cognac. Its success with our amateur customers confirms us in the style of the house: single year and single vintage cognac.

The average age of the cognacs in this extraordinary Grande Champagne assemblage is at least 70 years, the oldest dating to 1872 when the Normandin-Mercier house was first founded. What little remains of this original stock continue to age in very old oak, undisturbed. The combination is a truly outstanding cognac with profound aromas and a subtle, soft "rancio" in its perfectly balanced rich, long taste of incomparable smoothness. Its 40% alcoholic strength is achieved entirely naturally, with no requirement for dilution. The simplest of labels understates the quality of this cognac.
