"I remember a trip to Cognac a few years ago where I was lucky enough to stop at Hine and enjoy a wonderful vertical of old vintages of cognac, comfortably seated in the lounges of the Hine house.
Few Cognac estates can offer such a beautiful journey through time across a range of vintages.
By tradition, we have often used old Cognac barrels to age our calvados. These casks bring floral flavours and silky tannins. So it naturally occurred to me to try using some of their casks for our Experimental range.

Hampden Angel is made of a 14-year-old Pays d’auge Calvados which was finished during 8 months in 4 former casks from the famous Jamaican Hampden Rum. The 4 casks being made of American Oak, this Pays d’Auge Calvados was prequalified as an Eau de Vie de Cider to conform with the Pays d’Auage appellation rules.
Rich of high esters, the nose is very complex and straight forward with flavours of ripe banana, coffee, dark chocolate, vanilla and baked apples. The mouth is impressively rich and powerful. High acidity, long lasting with torified notes on the final.

Produced from Pays d’Auge apples, this calvados was distilled in 1995, before being aged for 19 years in red oak casks. It stands out for having been aged and finished in ex Port casks for a year. After exploring the islands of Jamaica, Trinidad and Tobago and Martinique, it is this time in old Foursquare barrels that the latest Calvados from the Drouin house were worked for the 8th edition of the range Experimental by Christian Drouin.
Foursquare is an iconic, family-owned distillery in Barbados. It produces rums of great aromatic expression that are recognized worldwide. A 17-year-old Pays d'Auge Calvados was placed in 8 French oak barrels which had previously contained rums from the Foursquare distillery. After 17 months of maturation in these barrels, the calvados was removed and placed in freshly toasted barrels for an additional 3 months before being bottled "Christian Drouin experimental Foursquare Angels'' is one of the most intense and richest expressions we have We produced in this range. The base was a powerful 17-year-old Calvados.
The rum barrels delivered notes of brown sugar and vanilla, giving the Calvados exceptional complexity and depth. However, upon release from the barrels, I thought that spending three additional months in freshly toasted barrels would further enhance the roundness and structure of this exotic marriage for a perfect balance between these two worlds.
Tasting Notes: On the nose, this calvados awakens the senses with its captivating aromas of ripe and roasted apples, delicate vanilla, creamy caramel and brown sugar. On the palate, it reveals all its richness with suave and harmonious flavors of tropical fruits, dark chocolate and sweet spices. The finish is long and powerful, opening with notes of pine nuts and almond.

Calle 23 Angels, is a 10-year-old Calvados Pays d'Auge which we have finished aging in two old Calle 23 Tequila casks. These casks had previously contained Tequilas from the Los Altos region produced from Tequilana Weber agaves.
In the search for a perfect balance between agave and apple, Calle 23 Angels are the blend of finishing in Calle 23 casks in the first filling of 13 months, and the second filling of these casks with a 4-month maturation.

The 3 casks being made of american oak, this Pays d'Auge calvados was re-qualified as an Eau de Vie de Cidre to conform with the Pays d'Auge appellation rules. The Eau de vie was bottled at 43%.vol. The nose offers a great balance between fresh apples and barley, hints a pear and peach. Mars Angels is a very delicate spirit, with an elegant mouth.
