A Heritage Ryecorn is the chief ingredient in this Wild Rye. It delivers an earthy, fresh rye bread aroma, toasty/biscuit like sweetness and a classic dry, spicy finish.
Their mash bill also includes barley (for sweetness) and wheat (for nuttiness). And finally, adding a small amount of chocolate malt. You will notice this on the finish, as it lingers on the pallet, urging your next sip.
After fermenting with a selection of speciality yeasts, they finish the process with the lid open. This allows for a secondary fermentation as the mash is infected with local airborne yeasts, particular only to Backwoods.
The wash is distilled twice in a custom-designed copper pot still, and a very tight cut is made to ensure that only the gentlest portion of the hearts is taken. What remains is right here in this bottle. A spirit that is rich in spice and sweetness. Handcrafted from grain to glass.
Backwoods Distilling Co. source all of our grain exclusively from expert maltsters, Voyager Craft Malt in the Riverina region.
Tasting Notes: Aromatic and doughy on the nose, with a earthy mouthfeel of hazelnuts and fresh toasted bread followed by a long nutty finish with moderate pepper spice.

Clearach is a single malt distilled in Scotland and matured between 2 and 3 years in wine fresh sherry casks.
Very clear amber tint. Typical to very young malts with almonds and frangipane (red jasmine) fragrance, nice grassy freshness with a slight touch of honey. Lively in the mouth, its maturation in wine casks, despite its young age, is revealing some silky elegance.
Possessing young spirit’s intense and lively characteristics, it displays the flavours of first vinous impregnations.

Cut with limestone water from the legendary mines in Rosendale, NY and non-chill filtered for the deepest flavour. The aroma of cardamom, pineapple and orange, while the taste profile hints at maple, almond and apricot. The finish rounds out with white pepper and basswood. This is a spicy summer rye and makes some great cocktails. A good bitter or a splash of vermouth or ginger beer goes a long way.

The mash bill for our Single Malt Whisky is made up of three grain types - Atlas LaTrobe (delivers a gentle and sweet flavour), Veloria Schooner (brings in a grassy and earthy profile) and Voodoo Schooner (rounds it out with honey and caramel). All of our grains are sourced from Voyager Craft Malt in the nearby Riverina region.
The mash is left to ferment for a minimum of five days, and then twice-distilled in our copper pot still. The spirit is then transferred to its chosen cask for maturation. We have Single Malt maturing in a variety of American and French Oak casks, that have previously held whisky, red or fortified wines. Our first Single Malt release was aged in French Oak, ex-Tawny casks and sold out in less than 24 hours.
