This emotionally charged Whiskey , distilled on July 23, 1998 already presented 20 years ago an exceptional character. After a long evolution in PX cream barrels, meticulously overseen for several years by the famous revolutionary and passionate himself, High Privacy today offers power and refinement, through a sublime peaty flavor, with notes of liquorice and peat bog. A balanced Single Cask , of an impressive aromatic richness, in a palate that knows how to remain suave.

The mash bill for our Single Malt Whisky is made up of three grain types - Atlas LaTrobe (delivers a gentle and sweet flavour), Veloria Schooner (brings in a grassy and earthy profile) and Voodoo Schooner (rounds it out with honey and caramel). All of our grains are sourced from Voyager Craft Malt in the nearby Riverina region.
The mash is left to ferment for a minimum of five days, and then twice-distilled in our copper pot still. The spirit is then transferred to its chosen cask for maturation. We have Single Malt maturing in a variety of American and French Oak casks, that have previously held whisky, red or fortified wines. Our first Single Malt release was aged in French Oak, ex-Tawny casks and sold out in less than 24 hours.

We were exceptionally lucky to have acquired a fresh Muscat Cask from an acclaimed winemaker (and his creative kids) which we filled with 6 year old Peated Whisky. A further 2 years maturation in the French Oak has produced a delightful sweet, salty and peated Single Malt Whisky ready for your enjoyment.
The sweetness of the Muscat is balanced with the rich, earthy and delightfully smoky elements of Bakery Hill peated whisky. This whisky perfectly encapsulates the seemingly magical process of transformation taking place over time in the quiet and peaceful darkness of a special and very loved oak barrel.

This single malt whisky was handcrafted from grain to glass by us, in our Yackandandah distillery.
To start, we used a mash bill of 100% Australian farmed and malted grains from the Riverina region. The cask chosen for this batch previously held Australian Cabernet. The perfect pairing of spirit and cask, to create a distinctive Aussie whisky.
Notes of honey and vanilla, dark fruits and spice.
Malt profile: 50% Atlas pale malt, 40% Veloria schooner malt,
10% Voodoo schooner malt

Matured in a bourbon cask for 3 years. Bright pale straw gold. Opens with intense aromas of lanolin / wet wool. Air contact drops the peat a notch bringing forward dried apple, cinnamon and light cocoa. Follow through with an oily, cereal, crisp malt delivery with the finish upping the richness adding cocoa-laced peat, walnut slice and lanolin carrying through to the aftertaste. Exhibits a freshness, balance and staying power that belies its youth. A whisky that's both delicious and distinctive.

Nose - Fresh and well fruity initially. Vegetal (tea thyme-lemon), it makes me think of some Benrinnes. Simple and direct. Its expressiveness and fruity are lost along the way, too bad!
Taste - Moist and light, precise and pointed. Accessible and aromatic, it is spicy with vegetal notes from end to end. Finish Creamy and sparkling.
When your expectations are zero on a whisky, you sometimes have very good surprises! I have rarely been seduced by Couvreur, I had a great time.

Celtic Kornog Oloroso Finish 46% 700ml

Bourbon casks are the norm at Glann ar Mor, so this Oloroso Sherry finish is something of a novelty. The peat has a mezcal-like edge, in this case there's opening suggestions of vinyl and varnish, mingling with vaguely green notes (white pepper, dried grass). Aeration accents the sweet barley as honey, boiled confectionary, marzipan? The peat is more definitive in the mouth, infusing flavours of toasted fruit cake. Green-wood smoke and a slightly grassy bitter-sweetness trail off in the finish. Always engaging, this distillery has established a distinctive style early on. Non chill filtered. 46% Alc./Vol.

Experience and friendship made that we did a cask exchange with Dominique Derain, wine producer at Saint Aubin. Very unique, he made matured a Chardonnay under a veil for more than 6 years, like a Vin Jaune. His wine has been labelled as "Voile Not", Dominique allowed us to give the same name to our whisky. Rich, powerful, this single malt develops very fine and subtle characters. Slightly woody with vanilly savors, enhanced by a floral elegance. With a lot of complexity, this single cask gives a beautiful length, spicy with extremly elegant golden savors. Chardonnay grapes is more discreet than usual Savagnin we know for VJ Maturation whiskies but very complex. The 30th October 2022, 430 bottles of 500ml, natural strength, have been made, no magnum because too limited. THANKS A LOT TO DOM for this great exchange!!!!

we use malted Tasmanian barley that we mill, mash, ferment and distil all onsite at our distillery. We have an unusual yeast profile that brings out different esters from the distillation. We have a 400l copper pot still and all systems are controlled by hand. The still is gas-fired still which allows us to use the temperature to caramelise the sugars in the spirit, and allows us detailed control over the distillation.
