For the aging of Napoleon, we only use 25% new barrel. Certainly, the new barrel brings two essential things: the colour and the woody tannins. But the very delicate aromas of vine flowers (comparable to acacia or elderflower) cannot stand to be masked by an excess of tannin, thus the use of less new oak. Further, we find a little acidity and freshness, as if we were crunching a grape during the grape harvest. Napoleon is the olfactory memory of white wine from Ugni-blanc. This natural acidity of the varietal - which would not necessarily be a quality for a table wine - becomes an essential asset for Grande Champagne brandies. The aromatic freshness of the whole range is supported by this acidity. Sweet, honeyed, plummy, pruney fruit on the palate. Same elegance, but more richness and depth, and savoury woody character. Classic Grande Champagne with perfect balance between fruit and age.

This cognac expresses all the fullness of the fruity aromas typical of a Grande Champagne, aged for a long time in oak barrels. At the beginning of the tasting, the aromas of fresh fruit at the beginning of summer - like peach or apricot - appear. As the glass warms, aromas of riper fruit, more oxidized by the sun, are revealed, such as plums, prunes and Agen prunes. These are the fruits of late summer: hot, matured, and stewed. The new kid of the range has, like all the little ones, been the subject of special attention. I thought it would be interesting to age the last year of the century in a separate and unique cellar. The entire 1999 harvest has aged in the cellar of Villeneuve-Haut, slightly less humid than those of Montendres. It was bottled at the end of 2017. Aromatically, it is the bridge between the flower of Napoleon and the fruits of the old reserve (X.O.). The aroma of Napoleon's vine flower intensifies and becomes more captivating; the fruity side of the old reserve appears. This combination of aromas, as well as the aging in dryer cellars, give a higher liveliness and make it a more "intense" cognac. Its success with our amateur customers confirms us in the style of the house: single year and single vintage cognac.

The Paul Giraud VSOP Cognac is a wonderful example of how classically elegant a Cognac of this quality can be. Created solely from eaux-de-vie from the premier cru, Grande Champagne, you can enjoy this traditionally produced delight in a number of ways.
