The Gin St. Laurent is a breath of sea air laden with salt, powerful herbaceous and floral notes interspersed with a pine-wood aroma reminiscent of Quebec's boreal forest. A complex gin resulting from an improbable union of aromatics from the four corners of the globe and algae of the St. Lawrence. A first herbaceous and floral approach gives way to notes of pinewood followed by pastry flavours, citrus scents and a peppery hint. The laminar alga, also called Neptune's harness, gives the Gin St. Laurent its characteristic greenish colour and a soft mineral and slightly iodised finish. 500ml 46% Alc/Vol Batches of 200 Product of Hobart, Australia The fresh spirit of Tasmania’s ancient Huon Pine, iridescent abalone shell and pristine water. A nod to a London Dry, our Dry Gin features the four key botanicals of sage, abalone shell, Huon Pine needles and red grapefruit. Fresh sage is grown in our distillery garden and we source the shell whilst on family abalone dives. Once cleaned, the shell is dried and broken into tiny pieces to infuse in the gin. Abalone shell, used in Chinese medicine, is a calcium carbonate to neutralise the acids and adds a slight salinity. Huon Pine (Lagarostrobos franklinii) is a species of conifer native to Tasmania. It is found by the edge of rivers and is an incredibly slow growing, revered local timber. The needles provide pine notes that differ to juniper and add to the complexity of the dryness.

Melbourne Gin Company Dry Gin 42% 700ml:   The Melbourne Gin Company, the latest project from winemaker Andrew Marks, began with this question: How do you create a gin that encapsulates a city? Starting with a love of gin and stovetop experiments, Andrew set out to create a gin that would live up to its name. This led to a journey into the world of alchemy and craft distilling, with a good deal of sampling along the way. Eleven botanicals, both local and exotic, are each individually extracted, distilled and then blended to create a well-rounded, smooth and slightly surprising gin. Building on the classic foundations of juniper berries and coriander seed, the grapefruit peel and Rosemary hail from the garden at Gembrook Hill Vineyard in the Yarra Valley, where the gin is made. The other locals are macadamia, sandalwood, honey lemon myrtle and organic navel orange. Bringing Melbourne’s cosmopolitan flavour to the mix are the exotics: angelica root, orris root and cassia bark. The final component is water – rainwater from Gembrook in the Yarra Ranges, 60km from Melbourne, with a purity that allows the botanicals to shine through. Andrew distills each botanical individually in an alembic copper-pot still, balancing seasonal differences in the ingredients with a winemaker’s sensibility. The final product retains this artisan approach. The result is a unique take on the essence of Melbourne. We distill our distinct small-batch handmade gin using Huon Valley apples to form our uniquely crafted Eau de vie. 17 botanicals, both contemporary Tasmanian and traditional are added including Sweet-scented Kunzea, hand-harvested Kombu, Tasmanian Pepper Berries, and Leatherwood Honey, Juniper, Coriander, Orris, Angelica, and Blood Orange. The water that we use comes from a lake of snowmelt at Mount Field National Park that feeds directly down to our distillery. Taylor and Smith Gin is evenly balanced, complex and aromatic making for a lovely Dry Martini or Gin & Tonic with cucumber. Additional serving suggestion: Pomegranate and Strawberry Collins 2 tsp pomegranate jewels 3 strawberries 60 ml lemon juice 20 ml sugar syrup (vanilla if possible) 45 ml Taylor & Smith Gin Soda to top Muddle 1 tsp of pomegranate jewels and the strawberries in a Boston glass or tin. Add lemon juice, sugar syrup, and gin. Shake with ice. Strain into a highball glass with ice. Top with soda and drop the second tsp of pomegranate jewels into the glass. Garnish with a strawberry fan.

Brocken Spectre 'Summer Gin' 42% 500ml: "I really thought I had an original idea, alas, no. Saffron gin has been done before in France. I think the Brocken Specter Summer Gin is the first Australian saffron gin; we use 100% Tasmanian grown saffron and never add any coloring. For the base we combine 16 aromatics including juniper, coriander seed, lemon myrtle, strawberry gum, star anise and vanilla bean. This mix is added to a grape based spirit and left over night. This spirit/aromatic base re-distilled, after; at full strength we add the saffron. After a few days the saffron stamens are completely white and simply strained out.
