Folle Blanche is the historic variety of Armagnac which once dominated the vineyards before their destruction by phylloxera in 1878; it was then called the "piquepoult". Today, a few small vineyards remain, but its cultivation is very difficult. Tasting note: - The appearance reveals a very lovely amber hue with sparkling gold highlights. - The nose is very subtle associating prune aromas with a light but intense rancio, and a spicy finish. - In the mouth, the attack is pure/direct. Plenty of body with hints of preserved fruit, kirsch, and lots of spices. - After opening, the bottom of the glass is majestic with liquorice, wooded, fat/oily notes.

This very rare cognac comes from a small farm located in a village close to Courbillac, Herpès. This producer works for other distilleries to supplement his income, and he is recognized as an expert of an ancient distillation practice called “méthode grasse”, which gives richness and density to the “eau-de-vie”, increasing substantially the positive effects of ageing. We buy the entire harvest, entirely composed of the Folle. Blanche grape variety is then vinified and distilled on the estate, before starting its ageing process in our cellars. The Folle Blanche is a grape variety that originates from the region, long before the Phylloxera crisis. It has since become very rare (around 1% of vineyards in the region) because of its sensitivity to Botrytis. This cognac was slowly reduced after the distillation while in specific casks to fully reveal the beneficial effects of this ancient distillation method. Tasting Notes: On the nose, notes of ripe grapes, and apricot, old Sauternes. Cinnamon, candied fruits and pineapple roasted nose. Tender, tasty on the palate, it’s possible to feel the greasy notes coming from this distillation process. A little compote side could be due to the fact that the percentage of “second” is important. Very smooth though, spicy finish; seems to be older than in reality. A nice Fins Bois, very rare.

Hine Angels is a magnificent 17-year-old Calvados Pays d'Auge that has finished its ageing with a 6-month finish in 3 old Hine Cognac casks. "I remember a trip to Cognac a few years ago where I was lucky enough to stop at Hine and enjoy a wonderful vertical of old vintages of cognac, comfortably seated in the lounges of the Hine house. Few Cognac estates can offer such a beautiful journey through time across a range of vintages. By tradition, we have often used old Cognac barrels to age our calvados. These casks bring floral flavours and silky tannins. So it naturally occurred to me to try using some of their casks for our Experimental range. I chose a 17-year-old Calvados du Pays d'Auge with great depth to match the flavours of the Hine cognacs." -   Guillaume Drouin
