Experience and friendship made that we did a cask exchange with Dominique Derain, wine producer at Saint Aubin. Very unique, he made matured a Chardonnay under a veil for more than 6 years, like a Vin Jaune. His wine has been labelled as "Voile Not", Dominique allowed us to give the same name to our whisky. Rich, powerful, this single malt develops very fine and subtle characters. Slightly woody with vanilly savors, enhanced by a floral elegance. With a lot of complexity, this single cask gives a beautiful length, spicy with extremly elegant golden savors. Chardonnay grapes is more discreet than usual Savagnin we know for VJ Maturation whiskies but very complex. The 30th October 2022, 430 bottles of 500ml, natural strength, have been made, no magnum because too limited. THANKS A LOT TO DOM for this great exchange!!!!

Main compenent in Bourbon is corn (mini 51% for bourbon), Gilles prefers Bourbons with an higher Rye content. He has acquired several barrels with different content of rye to make his own blend, another Champagne Twist.
Bourbon has to be aged in new barrels for the 1st 3 years of its life in the US.

The rare single malt was distilled in Scotland in December 1990 and was then transported to France where it matured for more than 30 years. Over a quarter of a decade! The ageing took place in a single Oloroso sherry cask in a Burgundian cave - now that's not something you see every day.

An exceptional blended malt is specially purposed for these last 30 years in order to share our personal vision of whiskeys. 3 malt whiskeys are blended, hence 'Tria Juncta in Uno': both upper class 25 yo and 29 yo very sherried whiskeys (PX casks) with our famous 16 yo Bere Barley malt whiskey. Entirely crafted by Michel, Bere Barley is a wild variety of barley, sown and harvested in Orkney, floor malted dried in summer 1986, distilled the 19th November 1986 in Scotland. Michel dreamt to produce a low yield whiskey following the pristine process.
“Tri Juncta in Uno” (Most Honorable Order of the Bath Motto) is the Latin translation of “three in one”. Our Britain soul is reminded by the handcraft leather box made by “La Malle Bernard”, a company thats crafts Morgan cars’ luggages.

Michel Couvreur 1984 30 Years Single Malt Whisky has amazing balance and subtlety. This whisky is over 30 years old (distilled on the 2nd of November 1984), 1984 malt whisky, ruby red with golden glints, has become slightly woody with floral fragrances. Very pure, it leaves in the mouth a very intense sherry complexity.
This unique French Single Malt is still in the barrel with an ABV that varies over time. The whisky will be bottled at cask strength only upon request and the bottling date will be handwritten on the label. For example if you order the whisky in 2017, it will be 33 Years Old. If you were born in 1984, this is the perfect chance to have a whisky hand bottled on your birthday. Comes in a wax sealed bottle inside a wooden box.
