Definition: Old rum with a three-stage ageing process
Production: After ageing for five years in the Caribbean and for a further three in the facilities of Bodegas Williams & Humbert in the wood of Dos Cortados (palo cortado), at this point “Dos Maderas 5+3” then enters a third and final stage of ageing in casks which have previously been used to mature Don Guido sherry (Pedro Ximénez) for over 20 years, to become the extraordinary Dos Maderas P.X. Both Don Guido and Dos Cortados have been aged for 20 years as certified by the oldest Denomination of Origin in Spain: Jerez-Xérès-Sherry.
Tasting notes: The final stage of ageing in Pedro Ximénez casks bestows a dark amber colour with delicate notes of raisin, fig and vanilla.
Suggestions for consumption: Given the high quality of the product we recommend serving in a balloon glass either neat or on the rocks. Connoisseurs may wish to enjoy it combined with aromatic mixers, fizzy or not.
The history of Bodegas Williams & Humbert goes back nearly 130 years. They participated in the creation of the Jerez-XÃ©rÃ¨s-Brandy Quality Demarcation and are now considered to be one of the worldâs most prestigious wine producers. Since then they have preserved part of the original wines and brandies (soleras) in high quality oak casks. These soleras are the base of the development and ageing of every sherry and brandy produced at Bodegas Williams & Humbert. But with such aromatic casks available they are ageing carefully selected traditional rums in their Solera Sherry casks, very much in the way that great Single Malts become interesting. Impressive!!
