Derived from the distillation of pure sugar cane juice exclusively harvested on the skirt of the Montagne Pelée, the white rum Cuvée de La Montagne is the fruit of a unique know-how.

Benefiting from a long fermentation combined with a very slow and fractionated reduction of 60 days minimum and a maturation of 3 months minimum before bottling, this Cuvée de la Montagne Depaz develops an exceptional aromatic richness.

You will appreciate all the aromatic richness of the white rum as well tasted pure or in accompaniment of cocktails rich in taste.

Tasting Notes:

Nose: A fruity white, floral and complex rum, with a specific mineral touch to the canes having grown on the volcanic rock present on the flanks of Mount Pelee.

Mouth: Offering a complex intensity and aromatic richness. The attack is sweet and haunting and gives way to an exceptional bouquet, fruity sweet and honey with a very elegant floral touch.

A mixture of notes of sugar cane, orange blossom, banana combined with spicy notes of pepper and tobacco follows.

Heralding from the paradise isle of Martinique, in the lush French West Indies, Depaz Rum is born from the rhum agricole methods of production and features the exclusive use of luxurious estate-grown fresh cut sugar cane. Depaz rums proudly hold the enviable French AOC - Appellation d’Origine Controlee – designation for Rums Agricole, confirming its strict adherence to precise standards of excellence. The Depaz estate history can be traced back to 1651 when it was established by the governor Jacques Duparquet. The AOC Rhum Agricole de la Martinique restricts production to the short best season for the cane to pack aromas, compels that all and only the fresh juice of the cane be used, contrary to 95% of the world rums using the left-overs (Molasses, crushed stalks) of the sugar refining industry. Agricole Rum belongs to the world of cognac or Armagnac, whenever Traditional Rum (also known as Industrial) is in the grappa / pomace world. Probably the best of Martinique rums, because on 8th of May 1902 the Montagne Pelée volcano erupted killing the 30000 inhabitants of the town of St Pierre at its foot. The Depaz plantation covered in ash could resume its sugar cane crops only many years later, but with very increased Yields and the best quality of cane juice, thanks to the fertilising properties of the layer of ash. A very small compensation for a terrible drama.
